These elegant crostini feature tender, seared Thousand Hills beef tips paired with a zesty horseradish cream, perfect for holiday appetizers, cocktail parties, or casual entertaining. Made with regeneratively raised beef, every bite is rich, flavorful, and memorable.
Ingredients
For the Beef:

1 lb Thousand Hills Tenderloin Tips

1 tbsp Thousand Hills Beef Tallow

1 tsp sea salt
-
½ tsp black pepper
-
1 tsp garlic powder
-
1 tsp fresh rosemary, finely chopped
For the Horseradish Cream:
-
½ cup sour cream
-
1 ½ tbsp horseradish (more to taste)

1 tsp Dijon mustard
-
1 tsp lemon juice
-
Salt and pepper to taste
For the Crostini:

1 baguette, sliced into ½ - inch rounds

2 tbsp Thousand Hills Beef Tallow

Optional garnish: fresh thyme or arugula
Directions
Preheat oven to 400°F. Arrange baguette slices on a baking sheet, brush lightly with soft tallow, and toast 8-10 minutes until golden and crisp. Set aside to cool.
In a small bowl, whisk together sour cream, horseradish, Dijon, lemon juice, salt, and pepper. Taste and adjust heat level as desired. Chill until ready to serve.
Heat tallow in a cast-iron skillet over medium-high heat. Season beef with salt, pepper, garlic powder, and rosemary. Sear 2-3 minutes per side, until browned and cook to medium-rare (130-135°F).
Spread a small dollop of horseradish cream on each toasted baguette slice. Top with a few Tenderloin Tips and garnish with thyme or arugula if desired.
Arrange on a platter and serve warm or at room temperature.
