This lighter take on a classic shepherd's pie features a rich, savory beef and vegetable filling topped with creamy cauliflower mash. Made with Thousand Hills regeneratively raised beef, it's comforting, wholesome, and perfect for family dinners or cozy nights at home.

Ingredients

2 lbs Thousand Hills 85/15 Ground Beef
1 tbsp Thousand Hills Beef Tallow
1 cup Thousand Hills Beef Bone Broth
1 medium onion, diced
3 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 cup frozen peas
2 tbsp tomato paste
1 tbsp fresh thyme (or 1 tsp dried)
1 tbsp fresh rosemary, chopped
Salt and pepper to taste

For the Cauliflower Mash:

2 large heads of cauliflower, cut into florets
2 tbsp Thousand Hills Beef Tallow
¼ cup plain Greek yogurt
Salt and pepper to taste

Directions

Steam cauliflower until very tender, about 10-12 minutes. Drain well and pat dry with a clean towel to remove excess moisture. Blend or mash with tallow, Greek yogurt, salt, and pepper until smooth and creamy. Set aside.
Heat tallow in a large skillet over medium heat. Add ground beef and cook until browned, about 6-8 minutes. Drain any excess fat. Add onion, carrots, celery, and garlic; cook until softened, about 5 minutes.
Stir in tomato paste, thyme, rosemary, salt, and pepper. Add beef bone broth and peas, stirring to combine. Simmer 5-7 minutes, until thickened and rich.
Pour the beef mixture into a greased 9x13 baking dish. Spread the cauliflower mash evenly over the top, using a spoon or spatula to create light swirls for texture.
Place in a preheated 400°F oven for 20-25 minutes, or until golden and bubbly on top.
Let rest 10 minutes before serving.
