Finding an easy breakfast for a small group can feel intimidating – especially when it comes to egg dishes. The process often seems more complicated than it really is. This simple casserole removes that pressure while helping us use up any leftovers waiting in the refrigerator. Everything goes in at once, keeping prep time minimal and the method approachable.
A light hand with added salt is recommended, since the brisket bacon and sausages provide plenty of savory seasoning on their own.
Ingredients

1 lb Thousand Hills Brisket Bacon

10 oz Thousand Hills Hickory Smoked Beef and Cheddar Sausage

12 large eggs

5 oz sharp cheddar, grated

5 oz mozzarella

2 oz pecorino or parmesan

1 cup plain greek yogurt
-
2 cloves garlic, minced
-
8 oz cherry tomatoes, halved

1 lb spinach, chopped

1 tbsp smoked paprika

1/4 tsp cayenne pepper

Fresh ground pepper to taste

Directions
Lightly oil a 9x13 baking dish. Preheat oven to 400 °F.
Place brisket bacon on a sheet pan and bake for 13 minutes, or until crisp.
Roughly chop the cooked brisket bacon along with Hickory Smoked Beef and Cheddar Sausage.
Mix all remaining ingredients together until everything is well incorporated.
Add the brisket bacon and sausage, the pour the mixture into the prepared pan.
Bake for 40-45 minutes, until the eggs are set in the center with only a slight wiggle remaining.
