Jack-O-Lantern Stuffed Peppers
Ingredients
- 1 lb Thousand Hills Renegade Ground Beef
- 6 Bell Peppers Large, Orange
- 1 cup Cilantro Lime Rice
- 3/4 cup Black Beans Drained, Rinsed
- 3/4 cup Sweet Corn Drained
- 1 Taco Seasoning Packet
- Shredded Cheese
Toppings (Optional)
- Salsa
- Sour Cream
- Sliced Jalapenos
- Fresh Cilantro
- Guacamole
Instructions
- Cook rice according to package directions
- Cut tops off of the bell peppers and core them out removing the seeds. Save tops for later
- Cut/"carve" your best face into your pepper making it look like a jack-o-lantern
- Preheat oven to 350°
- Brown your Thousand Hills Renegade Ground Beef. Once browned add beans, corn, rice, and taco seasoning
- Add Renegade Ground Beef mixture to peppers and gently press down to fill all crevices
- Place peppers into baking dish being careful not to tip over
- Place into oven and bake for 35-40 min
- Remove from oven and top with your desired toppings
- Enjoy!
