Jack-O-Lantern Stuffed Peppers

  • 1 lb Thousand Hills Renegade Ground Beef
  • 6 Bell Peppers Large, Orange
  • 1 cup Cilantro Lime Rice
  • 3/4 cup Black Beans Drained, Rinsed
  • 3/4 cup Sweet Corn Drained
  • 1 Taco Seasoning Packet
  • Shredded Cheese

Toppings (Optional)

  • Salsa
  • Sour Cream
  • Sliced Jalapenos
  • Fresh Cilantro
  • Guacamole


  • Cook rice according to package directions
  • Cut tops off of the bell peppers and core them out removing the seeds. Save tops for later
  • Cut/"carve" your best face into your pepper making it look like a jack-o-lantern
  • Preheat oven to 350°
  • Brown your Thousand Hills Renegade Ground Beef. Once browned add beans, corn, rice, and taco seasoning
  • Add Renegade Ground Beef mixture to peppers and gently press down to fill all crevices
  • Place peppers into baking dish being careful not to tip over
  • Place into oven and bake for 35-40 min
  • Remove from oven and top with your desired toppings
  • Enjoy!
