Honey & Herb Glazed Brisket
This sweet and savory brisket is slow-cooked to perfection, infused with fresh herbs, garlic, and a sticky honey glaze that caramelizes beautifully. Perfect for Easter or any special gathering!
Ingredients
- 1 3-4 lb Thousand Hills grass fed beef brisket
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 large onion sliced
- 4 cloves garlic minced
- 1 cup beef broth
- ½ cup apple cider vinegar
- ⅓ cup honey
- 2 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 tbsp fresh rosemary chopped
- 1 tbsp fresh thyme leaves
Instructions
- Preheat & Prep: Preheat your oven to 300°F. Pat the brisket dry and rub with olive oil, salt, pepper, smoked paprika, and garlic powder.
- Sear for Flavor: In a large Dutch oven or oven-safe pan, heat a bit of oil over medium-high heat. Sear the brisket on both sides until golden brown, about 3-4 minutes per side. Remove and set aside.
- Build the Flavor Base: In the same pan, sauté onions and garlic until softened. Add beef broth, apple cider vinegar, honey, Dijon mustard, Worcestershire sauce, rosemary, and thyme, stirring to combine.
- Slow Roast: Return the brisket to the pan, cover tightly with a lid or foil, and roast for 3.5 to 4 hours, basting with the juices every hour.
- Glaze & Caramelize: Increase the oven temperature to 400°F. Uncover the brisket and spoon the thickened honey glaze over the top. Roast for 15-20 minutes, allowing the glaze to caramelize beautifully.
- Rest & Serve: Remove from the oven and let the brisket rest for 15 minutes before slicing against the grain. Spoon extra sauce over the slices and serve with roasted vegetables, mashed potatoes, or fresh greens.
