Scott Pampuch, Director of Culinary Operations / Chef / Restaurant Consultant - Mise en Place Consulting, uses Thousand Hills Cattle Company 100% Grass Fed Boneless Ribeye Roast in combination with the following ingredients and preparation techniques to create the perfect Salt Crusted Prime Rib Roast meal:
Ingredients:
- 4# Boneless Ribeye Roast
- 12 cloves garlic
- 1 Tbsp black peppercorns
- 1 cup kosher salt
- 4 sprigs fresh Rosemary
- 5 Allspice berries
- 6 Bay leaves
Preparation:
- Toast peppercorns, salt, Bay leaves and Allspice berries
- Chop Rosemary and garlic
- Combine spices, Rosemary and garlic
- Rub roast and let marinade for 24 hours
- Roast at 400° until thermometer inserted in middle of the meat reads 125°,remove from oven and let rest for 20 minutes
